The Family Lamb

They’re involved in every step of the process from paddock to plate, ensuring ideal conditions for their lambs. The Hayes family have been farming the area for over 125 years. Bill works with selected properties and hand picks every lamb himself. After they’ve aged and hung for seven days, Bill handles the boning and packaging then sends them straight to his daughter Sam who lives in Sydney. She develops direct relationships with select markets and restaurants completing the family owned, paddock to plate process.
